Preparation Methods:
1. Mixer Method

Mince meat and fat through a coarse plate.

Add the 1.18kg sausage mix and blend evenly into the meat.

Gradually add water and mix until fully absorbed.

Re-mince through a 5mm plate and fill into casings.
2. Bowl Chopper Method

Dice meat and fat and add to the bowl.

On slow speed, sprinkle the mix over the meat until dispersed.

On high speed, gradually add water. (Note: Use slow speed if you prefer that traditional, rustic, chunky leek texture).
