Preparation Methods:

1. Mixer Method

  1. Mince meat and fat through a coarse plate.

  2. Add the 1.18kg sausage mix and mix evenly.

  3. Gradually add water and mix until fully absorbed. (Optional: Fold in extra grated smoked cheddar now).

  4. Re-mince through a 5mm plate and fill into casings.

2. Bowl Chopper Method

  1. Dice meat and fat and add to the bowl.

  2. On slow speed, sprinkle the mix over the meat until dispersed.

  3. On high speed, gradually add water. (Use slow speed for a coarser, rustic texture).

  4. Fill into casings and store refrigerated.
