Preparation Methods:

1. Mixer Method

  1. Mince the meat and fat through a coarse plate.

  2. Add the 1.18kg sausage mix and mix evenly.

  3. Gradually add water and mix until fully absorbed.

  4. Re-mince through a 5mm plate and fill into casings.

2. Bowl Chopper Method

  1. Dice the meat and fat and place in the chopper.

  2. On slow speed, sprinkle the mix over the meat until dispersed.

  3. On high speed, gradually add water (use slow speed for a coarser, rustic texture).

  4. Fill into casings and store refrigerated.
