Preparation Methods:

1. Mixer Method

  1. Mince meat and fat through a coarse plate and place in a mixing bowl.

  2. Add the 1.18kg sausage mix and mix evenly.

  3. Gradually add water and mix until fully absorbed.

  4. Re-mince through a 5mm plate before filling into casings.

2. Bowl Chopper Method

  1. Dice meat and fat and add to the bowl.

  2. On slow speed, sprinkle in the mix until dispersed.

  3. On high speed, gradually add water. (Note: Use slow speed for a coarser, rustic texture).

  4. Fill into casings and store refrigerated.
