Butcher Blocks
Butcher blocks are hard wearing and made to last but must be looked after. A mineral oil finish is preferable on butcher blocks rather than polyurethane or varnish as the butcher block oil finish is easy to maintain, which will make repairing the butcher block much easier, oil finish on a butcher block prevents the wood in the butcher block from cracking or seams pulling apart.
Reversible Block.
Clean daily with a wire brush or a block scraper, then use a cloth + sanitizer.
Dry cloth first, do not use a lot of water on the block, since it is very absorbent.
This procedure can be documented as part of your HACCP plan and is easily demonstrable during any audits.
